Tonight's Slow Cooker Chicken

This recipe is simple, but it's delicious. With grad school, a one-year-old, a husband who's working hard because of a new promotion, my freelancing, and our company, my time's pretty limited these days. Our Crock-Pot has become one of my best friends! This recipe isn't the healthiest. One day I'm going to learn to make more soups from scratch, but it's not too bad.

Dice up two large chicken breasts and toss them in the slow cooker with a tablespoon each of oregano, basil, and garlic. Then add in a can of cream of celery (or any variety) soup and a can of cream of chicken soup. Cook on low for about five hours. Make sure the chicken is done and enjoy.

The three of us eat from this recipe twice, but then the little guy doesn't eat a whole lot. We have it over rice with broccoli. We've also had the liquid as a soup with bread, which is very tasty as well.

Plus, it's cheap. We buy a bag of frozen, skinless chicken breasts. It's $7 for a bag of 6 breasts. With all of the ingredients combined, this dish costs about $4.75.

Easy Sugar Cookies

I'm definitely still learning when it comes to baking. I found this simple sugar cookie recipe in an old exchange diet diabetic cookbook. It uses sugar, but you can go half and half with Splenda if you'd like. This recipe is super easy! I know that I can experiment and add chocolate chips and such, but I haven't gotten there yet.

1/2 cup sugar
1/2 cup butter or margarine (we use unsalted)
1 egg
1 teaspoon vanilla extract
2 teaspoons baking powder
2 cups flour

Combine the first five ingredients. Once they're completely mixed, pour the flour in a little at a time. When it's all mixed, put it in the fridge covered for 2 hours (or overnight). Then you just break off chunks and roll them into little balls. Put them on a greased baking sheet and press them down with your knuckles.

They're a perfect quick dessert for your family if you think about them in the morning.

If you forget to cover them, the dough will harden. Just toss it in the microwave for 15-second increments until it softens.
