Easy Sugar Cookies

I'm definitely still learning when it comes to baking. I found this simple sugar cookie recipe in an old exchange diet diabetic cookbook. It uses sugar, but you can go half and half with Splenda if you'd like. This recipe is super easy! I know that I can experiment and add chocolate chips and such, but I haven't gotten there yet.

1/2 cup sugar
1/2 cup butter or margarine (we use unsalted)
1 egg
1 teaspoon vanilla extract
2 teaspoons baking powder
2 cups flour

Combine the first five ingredients. Once they're completely mixed, pour the flour in a little at a time. When it's all mixed, put it in the fridge covered for 2 hours (or overnight). Then you just break off chunks and roll them into little balls. Put them on a greased baking sheet and press them down with your knuckles.

They're a perfect quick dessert for your family if you think about them in the morning.

If you forget to cover them, the dough will harden. Just toss it in the microwave for 15-second increments until it softens.
